The demand for isekai-like content has always been there. That's why MMORPGs became popular to begin with. It just took time for the anime industry to figure out how to distill it, with the help of video game tropes becoming popular in LNs.
There is a shared gestalt on how a fantasy world is supposed to work which lets them produce series after series of formulaic, low risk content.

The guest talked about "portal stories" and how we frequently retell it. Harry potter, wizard of oz, beyond the looking glass, alice in wonderland... The matrix, even. At the core they're all the same concept as isekai - a regular person is saved from their boring life by going somewhere magical and new.

Nobody goes exploring thinking they will accomplish nothing. The Matrix, Harry Potter etc have OP protagonists as well, and even in the case of stuff like Alice in Wonderland or Wizard of Oz where they don't it's still a kind of plot armor just being a protagonist of this kind of story. Isekai are just for the most part less competently written so the OP is more obvious and front-loaded.
The real abberation are the edgy isekai where the MC just suffers and shit, which is probably a derivative, intentional subversion.

I guess there might be a useful distinction to be made in whether the journey is voluntary or not. Do you enter the portal or are you flung into it? Still, it's possible the MC willingly enters the portal but still gets his """expectations subverted""" and suffers, but for the most part I expect suffering isekai to be involuntary... Nah, it works both ways, it is also more triumphal to beat the new world when "you didn't ask for this".
