Isekai is ultimately just an expository mechanic that provides the writer with an easy way to introduce the setting and characters. The traditional way to introduce this is to make the protagonist a hillbilly, or give the protagonist amnesia. It's relatively difficult to make a story where there is not a narrative device to show why the character needs to care about the things he cares about. Goblin Slayer does this by having the Preistess be the hillbilly (or at least relatively innocent) and Chaika does this by giving Chaika amnesia.

Characters you can attach to, then ground their human suffering into the setting properly. Space it out with moments of levity that the character would clearly want, and if romance is involved, none of the will they, won't they bullshit, because despite their shoddy quality Gundam SEED and SAO probably got its popularity because the protagonists finally fucked, and they got further episodes beyond that moment.

I think one big mistake most authors make is they try to give their MC something that makes them special and unique right off the bat. They'd generally be better off having their MC be relatively normal; If they have a specialty it can be something that a dozen+ other people also have a specialty in within the neighboring area. But you drop in the subtle foreshadows and/or put them into situations that sparks and fuels their growth. Then if or when they become a special snowflake it doesn't feel cheap because you've been rooting for them to stand tall over others because you've watched them work hard, struggle, get assistance from others, and happen upon lucky circumstances.
