There is no "meaning", Anno and the crew outright state that they just used the symbolism because it was cool looking and shocking.

Eva is extremely easy to understand. The reason it's so compelling to so many anime fans is because it hits very close to home. Anime fans are mostly socially inept otaku. This series and movie was made to attack their insecurities and make them feel extremely depressed. Art is an attempt to simulate a feeling. Eva's attempts to simulate sheer, utter and complete hopelessness and despair. That there is nothing you can do to stop your life from falling apart. All you can do is keep repeating banal truisms to yourself while not actually doing anything because you're too much of a cowardly little weakling. "I mustn't run away" and yet you do. Eva is an admonishment of otaku culture. It's the equivalent of your dad yelling at you for being a failure. It's a lasting, stinging sensation because you know he's right. And he shoves it in your face with Asuka and Rei waifus, cool looking giant robots and awesome animation. It's like baiting a dog with a treat and then using it to beat him over the head with it.
