Where can I read a summary on what happens after the anime

No idea, but I can basically just tell you. Obviously I'm skimming a lot.
Right after the anime ends they and all the other volunteer soldiers get called for a big quest against some fort occupied by orcs. Moguzo gets killed because they didn't realized how beat up he was when they were taking out the boss orc.
After that they recruit a paladin whose personality would probably be best described as FNG. They fight a bunch of monsters in a cave that has tunnels to other worlds and basically grind inside of a strange world with a bunch of one eyed creatures until some giant chases them and all the other people that had started to make a living killing things there.
Rather than end up back to Grimgar they get stranded in a different world that's permanently night and has no humans or any similar to human races that speak their own language. After fucking around there for a while they find orcs and on a hunch that the orcs had some path to grimgar they search for and find one
Back in Grimgar they're way the fuck away from the town they've lived in and have an encounter with some sort of vaguely oriental town. Ranta "joins" some bandits to save some party members and eventually gets separated/left behind by the group. Some sort of flesh golem and monster-hunter-style-cat-wrangler girl joins the part
Wandering towards their starting town and getting chased by a pack of monsterous gorillas they encounter a strange man trying to build a town with half orcs. Long story short the town gets wiped out by gorillas, and the source of the man's weirdness ended up in Mary as a desperate attempt to keep her alive at the cost of the strange man
After they they find some pirates and have the first fucking fun volume in forever, they get a huge bounty, and at the end Yume stays behind to essentially learn how to be a DnD monk and promises to meet them in a year

after that
They arrange to travel back to the starting town, but wander into a magic circus tend and fuck around in a weird dream world that is apparently also connected to japan. The last volume ended with them getting back to grimgar and possibly having their memories erased (but that's really just teaser shit, so who knows?)

Atelier BWCA (the studio in charge of the backgrounds) closed its doors, so no. Probability is as close to 0% as any anime has likely ever gotten, since it were the backgrounds carrying the shows aesthetic and without them the whole thing wouldn't even be worth producing.

Those backgrounds really did make the show. I don't think I would have watched it without them

Honestly it sounds fucking awful.

To be fair, he cut all the character drama, the backstabbing, the dead bodies etc. It'd be really fucking boring without them.

It can be kind of interesting when it features other volunteer soldiers, and otherwise still has its moments, but overall it's sort of just bad and just feels like their wandering hasn't amounted to anything. I think the biggest flaw is that he still hasn't advanced the Haruhiro and Merry stuff. I'm kind of grateful for the anime leaving off where it did as it feels like a much more complete story than any other point later in the LNs would

I'm still mad about Moguzo.

I think it would have been a decent set up for them questioning why they're even volunteer soldiers in the first place, but that never really happened
