Asuka wasn't the nicest person, but more than anyone else in the series she shows genuine care for Shinji. Misato only shows care for Shinji out of a misplaced and selfish need for validation from male figures because of her own past life. Her affection is ingenious, which is made evidently clear by the way she tries to deal with him in later episodes of the series.
I think that people who misunderstand or dislike Asuka still have their own evident fear of rejection and take her interactions at face value because of it. Their own angst unable to give them the ability to view Asuka's demeanor and actions in any kind of critically reflective manner.

She's not, she is however unarguably one of the most iconic tsundere who played a major role in cementing their cultural appeal.
I never said Asuka's character was deep, but she is certainly more complex than any character in the series aside from Shinji. While we can label her a tsundere, she's realistically a depiction of an actual teenager girl rather than the boiled down trope we commonly see in series today.
The point isn't that it takes great effort to reflect on her actions and demeanor, it's that no effort is taken by those particular viewers at all, they only take her at face value because their own fear of rejection and past experiences would lead to a painful introspection of themselves.

She's perfectionist, defensive and determined not to show weakness, and her angry outbursts and denial that she cares about anyone ultimately trip her up when she tries to connect with the others.
In EoE, she manages to show affection without being an ass and Shinji manages to not run away, and they do this in spite of all the fucked up shit that just happened.
