That depends on what you're looking for. If you want psychological characters studies and reflections on the human condition, you're out of luck. But there are plenty of masterclass shows in other genres, like Cowboy Bebob, GitS: SAC, Mononoke, perhaps Haruhi and K-On if you're not too contrarian to watch Moe. And there's always some Ghibli movie you haven't watched yet.

Personally, I've never gotten around to watching Revolutionary Girl Utena and Legend of the Galactic Heroes, so those might be candidates for that list.

Oh, and I forgot to mention Vision of Escaflowne. Its not quite up there, but after rewatching it recently, I must say it holds up incredibly well.
