The ending is even dumber, when the Ghouls reveal their true identities to show they're human too. But the Ghouls are sadistic, cannibal monsters! One of them runs an Eyes Wide Shut Club, another is responsible for dozens of serial murders. One of them tried to eat the protagonist and his buddy in his first appearance, and only turned over a new leaf after he was nearly murdered and cannibalized.
Appealing to common humanity wouldn't work at all. Realistically, people would've gone "Holy fuck, this guy's the guy behind the murder of dozens of young women."

I'm still looking for something to read that can give me the same feeling I got when reading through the first 14 volumes, it's that good in my opinion. Sadly, as it's often the case with weekly published series, the author will eventually fail to maintain that level of storytelling up until the end because they have to meet deadlines week after week. Same stuff happened here, so the series runs out of steam halfway through :RE and it's ridiculously obvious. I won't go much into detail since I don't know if you actually want to read it, but let's just say that the author offscreens characters, shits on previous established characters or just tries to fill as much information as he can by cluttering tons of smaller panels in every single page because he feels like rushing the shit out of his series.

I loved the whole Kaneki storyline but I can't make myself get through the Tokyo Ghoul:re plotline. Does it get better? Do we get Kaneki back?

It should have ended on the first series, a good nice tragedy as it was intended from the beginning, Kanekis rising ending with his death and ultimate failure, a tragedy by the books, but they just couldn't help themselves but grab shekels.
