Episode 1-6 is worth watching. The rest is terrible.

Previously anime was mainly about telling a story, and Evangelion is more experimental, about the subjective perception of the characters, and not really any main story. It was kinda not relevant for them to save Earth, because story is a little absurd, but more about psychology and blending the reality with character's personal expectations/worldview. I mean it wasn't your typical shounen where the main character knew what to do and killed all bad guys one by one, but none of the characters actually KNEW what is going on and what is right and what is wrong and what they should do, and they questioned their own behavior, etc.
Plus it's vague, and really dreamy, which has a room for many interpretations

Strongly disagree if you are only going to watch one thing Eva it should be EoE. Overall though it's not a long show and if someone is interested they should watch the entire thing.

Or they could watch episodes 1-6. That's under 2h30 and a much more coherent viewing experience. If you wanted to watch a piece of shit movie with great animation, Akira is a better choice than EoE because it makes more sense and doesn't require having seen 26 episodes to make sense of.
