Often it's presented as some kind of deal sweetener to get the MC to agree to travel to an isekai instead of re-entering the cycle of reincarnation or going to heaven, because the gods need isekaied people for some reason, and because the gods can't just force dump souls into the isekai without their consent for some reason.

The Akashic records are the end-goal because, if they exist, they should contain the knowledge to make goal a reality.

Knowing how to metagame is an important skill for someone being summoned to rules-based world. Not that most isekai protagonists can even do that.
In many works of fantasy, a summoned greater being is either broken to your will by magical means, or is granted appropriate tribute in exchange for their power. For example, the Servants in Fate answer the call because they are promised the Grail, but also are bound to obey the orders of the Masters through the Command Seals.
Imagine if instead of summoning warriors from another world, they were summoning sex slaves instead. Would at least make more sense.

Elliot was directly summoned by the church so outside of the compulsion(does he actually have this? I don't remember him actively trying to fight demons at all) he was fine, we know very little about the 3rd hero so your guess is as good as mine, but the group rebelling against the goddess all but stated it was the goddess that did it and they may have misled, but not actively lied to Suimei thus far, and Ryuji is a natural born hero with an inborn desire to help so his compulsion was moreso just towards fighting the demons.

There's many flavors of urban fantasy from Nurarihyon no Mago to Kaze no Stigma to Fate/stay night. The magi of Suimei's world seem closer to Type-Moon's in motivation and Raildex's in power scale.

I didn't read that particular manga, but in most isekai, the issue would be all humans are 'weak'. Even a 6'3'' powerlifter is weak in a world of magic and demons.
So it doesn't really matter what their physical attributes are. What's more important is their attitude. You don't want to pick some Yakuza member that will rape and pillage everything and may even JOIN the demon lord, rather than defeating the demon lord.
How about say, human males in that world have a disease that makes them infertile, DNA is just different enough/lacks certain receptors for the pathogen to bind to/attack, and the unlock mechanism requires a fertile male below 30?

This is a fairly reasonable expectation though. The soldier is more likely than not a huge weeb who is very, very bored and will probably put pillowcase with his waifu on it over the nuke and try to fuck it or some shit.
It's inherently a genre for wish fulfillment, so I can always feel that as soon as too many characters fall in love with the MC. I don't know if some harems don't do this, but one of the problems is how the people that fall in love can basically be reduced to checklists, in the sense that once they're in love with the MC, they won't fall out of love. It doesn't make them feel like real people if too many people love a single person for too long, and kinda goes back to the wish fulfillment aspect.
I guess to avoid the second issue you could just write a short harem, but the first part always remains in the back of my mind.
I just find them generally replaced actual characters with quantity, especially in anime nowadays where it'll be almost a miracle if they'll even breakthrough 12 episodes.
I like harems most of the time, but they are best when it's not the kind where there is only the obvious one winner declared at the end. True harem that occurs in the middle of the story is better. Ideally a harem will be small enough that there can still be plenty of character interactions between harem members with things that aren't just about how they want the MC's children, even if that is an important topic.

There's nothing inherently bad with harems, it's just that they are poorly executed most of the time; not that monogamy is necessarily any better.
Unless the genre is explicitly romance/romcom like 5-toubun or bokuben, the big problem with harems is that there is only so much room for romantic focus and development. When you divide this limited space among 3+ characters, suddenly all of the harem members feel like bland doormats with no development whatsoever.
Generally because it's bad writing to unnecessarily overdescribe things unless there's no basis reference point for imagination (e.g. some unique magical entity).

She basically exists as an extension for another character, the actual main girl. So, her character does a little (though is only introduced fairly late into the novel), but every time she's there we're supposed to be thinking about the main girl. So basically, not really.
Also ATG's pretty bad in general so there's also that.
The only other novel that comes to mind with loli romantic interests is Shura's Wrath, which I did enjoy more than ATG. But even though her character was definitely more fleshed out, the romantic aspect was as forced as it gets -- in the epilogue where MC bangs literally every female character in the novel, she's included, even though she was strictly daughteru until that point.

But along the way he meets a bunch of over the top gorgeous female adventurers, because ugly/average girls don’t exist. How should he respond to them? Show no interest and be devoted to his main girl, have casual flirting with all of them equally, have varying degrees of interest based on a girl by girl basis?

I read a (western) fantasy novel from decades ago that was like that. Mages used mirrors to summon things into their world. They thought they were creating the things they summoned from nothing, but were actually viewing other worlds in the mirrors and taking people from them.
They were facing some ancient evil dark lord or something and summoned some Warhammer 40k marine like guy to save them, only for him to have a mental breakdown at finding himself in a different world and run off somewhere.
iirc he showed up again well adjusted and settled down to live a simple life with some woman, but he didn't get involved in any of the world saving at all.
