I think you're misreading in both cases, respectfully. "That samurai's sword only turns red when he fights" is what the woman in the panel is saying, and the breath of sun user refers to Tanjirou's ancestor by name as Sumiyoshi. This page (which I had not seen before) seems to confirm both people.

Wind won't die anytime soon, he still has unresolved beef with Tanjirou and other main characters and this is guaranteed to carry over to when Tanjirou and friends get promoted to pillars. Whatever the next arc is will probably have Tanjirou and Wind working together as pillars somehow and their dynamic will get resolved this way.

I feel like this show could use some comfy filler episodes. "Demon of the week" formula is very suitable for this. But with how closely it follows the manga, taking basically no liberties, this seems unlikely.

The only characters I really wish had been defined more are all of the demons, but that’s only because of what I personally like to see in a story. It makes sense that she didn’t/hasn’t really delved deep into any of their backstories or motivations since the focus of the manga isn’t exactly fixed towards them. I thought Akaza’s last little bits of characterization and his backstory were good enough for a shounen and we haven’t actually gotten to the other important demons yet, so it’s a given that they haven’t been super defined as of yet
As for the other non-demon characters, I’m gonna have to disagree with you. All of the pillars that the manga has focused on have been either fleshed out well enough, or we just haven’t reached a conclusion to their character yet for us to judge how well defined they’ve been written. - Loudmouth and overreacting humor characteristic of certain types of anime and manga characters, actual japanese people will likely be more fond of that.
- Coward that has shown glimpses of good attitute, that means room for growth.
- A type of underdog character, some people will attatch themselves to a loser who can be allowed to win once in a while.
- Bright color scheme, moreso than every other character in the series it immediately catches your attention.
- Lightning theme, you would hard pressed to find characters in fiction with lightning powers who didn't automatically score points in potential popularity with just that alone.

Pretty easy why Zentisu got as popular as he did, even if one may hate him the reasons are clear as day.
