depends on what you're looking for. death is unironically my favorite eva film but its very much not for everyone. if you like the editing and visual styles of the series and maybe have a passing interest in non-narrative film and recontextualization in montage & filmmaking then give it an honest chance

In 2.0, Shinji throws his walkman into the trash after the Bardiel incident when he leaves NERV.
Rei grabs it and takes it with her.
In 3.0, Shinji and the walkman are the only things to emerge from Eva-01.
At the end of 3.0, Shinji drops the walkman on the ground as Asuka drags him off, Rei Q appears to take notice of it and very likely picks it up.

It at least has some sort of new symbolic significance.

While that is technically true, up till now actually watching Eva was somewhat hard in US. Nobody had it streaming legally, disks were out of print, so you had to get lucky with a place or a friend that already had them.

I agree that Eva has always been a very popular show. Yet I think that there are more ways for one to enjoy it.
People that brag about symbolism, religious aspects and the lore of the series are dumbass plotfags.
Eva was made by otaku for otaku, it is an incredibly important show for the industry and for every "real" anime fan.
Normalfags may watch Eva, but they won't enjoy (or hate) it as mush as people who actually care a lot about the medium.
