Never read/watched Fate.
But this is a pretty good character design and I can see why this series is so popular. Her ribbons hang down to (almost) the exact height of her hair side strips. Further than that, the loops hang down to the approximate height of her chin. It's very well balanced.
Maybe I'm reaching but there's also vertical divisions, first between her face and the side strips, then between the side strips and the braiding, and then the braiding and the edge of her outline. Each one of these vertical segments is smaller than the last.
Also she has an ahoge which is my favorite anime trope

Also, in each of these vertical divisions the hair goes in different directions, first it goes up and down, then it goes sideways, and in the back it goes all sorts of directions.

It sometimes concerns me how fucking crazy I am about this character. I read her route in 2009 when I was in highschool and was depressed. I read that shit in the winter, mostly at night, like how the VN took place during that time and season. It was captivating sitting there just reading it night after night by myself in the middle of the house on my family computer. I met this character after watching the anime and wanting more of her story. I read it and basically just fell straight deep in love with her. It's still burning in my chest after all these years even with having a wonderful relationship irl with my future wife. Only Rin and Shirou are in an actual relationship in that ending. Saber is basically acting as a guardian/mother figure to them.

UBW Good end is pretty much treesome ending which set Shirou, Rin and Saber into polyamory.
Anime don't remove anything. They just left vague most of Shirou's choices that would led to "Saber points" in VN. And Nasu's "mother figure" was just his interpretation for anime itself, which lead to primarily True End. Good End OVA pretty much back set on their close relationship which let to polyamory again. See their very last scene in OVA.
