It wasn't a demon, or even a ghoul, it was the angry souls of all those who had been killed and dumped inside the cavern that offered their power to the burning soul of the horse, who had been torn away from its child and brutally killed by the soldiers of Daigo. I doubt it understood specifics of warfare or anything, all the animal knew was that these people had made it leave what it loved behind and forced it to die for their cause. Hyakkimaru's calls and determination at the bottom of the chasm to get Dororo back likely resonated with it and the souls possessing it, and she understood what it was he was trying to do and found connection with it. They both held rage against Daigo's soldiers and they both desired to take back what was stolen from them, that's why they connected so easily.
The specific of why it came back was shown when soul of the mother was finally at peace when it could be reunited with its child, however brief. Its desire for revenge and to see its child had been fulfilled, and there was nothing more to keep it together.

Daigo's kingdom was based on theft.Then when the victim fights back he throws a hissy fit saying how he should just sacrifice himself and be a happy little bitch. But the red redpill is that even with the sacrifice, Daigo still made his people suffer due to constant warfare. Dororo shows up to the burning building, Hyakki opens his eyes to see a blurry image turn into dororo. The building is collapsing Hyakki quickly tosses Dororo to safety as the building and fire consume him. Dororo is devastated and we get a time skip. With her Father's gold see creates a village that prospers and everyone is happy. A shadowy figure passes by in the crowd, Dororo chases after this figure and she finally catches up to it. Its Hyakki, Dororo gets emotional and they embrace in a hug. Camera pass over the hillside to a golden field of rice. The End

Hyakki's dad is the most moustache-twirling villain I've seen in ages, it'd be really easy to give him any sort of depth at all but they didn't bother. Tahomaru almost is nuanced but isn't so you can't even properly blame the people irrationally self-insert as Hyakki hating Tahomaru for existing at all really, it's the writers fault.

In any case, Tahomaru dies during the Banmon story in the manga so his hopes for survival are null.

The sludge demon ate up random villagers, the giant centipede demon forced a village to sacrifice one of their own every time it's hungry, the cursed sword forced it's wielder to hunt for blood.
