SnK only ever starts fleshing out their main characters 2 thirds in and I think characters are the most essential part of a story.
The world is largely uninteresting, due to the fact alot of its properties are unrealistic in a tedious sense. How do you even manage an empire that covers whole Africa, Europe and parts of Asia? For a series that introduces global politics as a major theme it lacks alot of political intrigue that comes with it. Where are the scattered nations in Africa creeping up on Marley? Where are the civil wars of non-Marleyan natives? Of course, we don't get to know any of that because Isayama is trying finish the series by next year. Don't get me wrong, I know that Marley has been busy fighting on many fronts and has its own shortcomings, but the fact that absolutely noone but a clan from Not-Japan tried to ally with Eldians after about 100 years of isolation and non-aggression against the world is ridiculous. The hatred for Eldians also seems very contrived. Why would nations 1-2 continents away care about what Eldians did, more specifically, what they last did 100 years ago?
I could go on about this, but I hope I made my point clear. For a political shift, the manga is too simple to execute it in an amusing manner. Not enough political figures who act through pragmatism, unrealistic imperial borders and no ethnic undertones that isn't Marley or Eldian. The lack of complexity demotes this series to a shounen-tier manga.
The lore seems like your average cutout mythology. Nothing really interesting to it.
Even the fight scenes are a bore, it's just flesh mechas punching and tackling eachother until one of the survey corps members comes in to assist them.
And I haven't even begun talking about exposition scenes, the manga really likes to throw flashbacks to add up mystery and thrill, which in turn could have been wait in cleverer, more sublte ways.

If I want to read a shounen with amusing battles, I read FMA. If I want politics, I read ASOIAF.

FMA has a much more properly planned out narrative. While AOT might have some very kino moments you have things like asspulls, things dragging on for longer than they should be to worry about, and obvious plot armor. However, it is bad writing due to how it was presented. Far too spontaneous, cheesy, and casual, it was presented up front as an "explanation" for Hisoka's survival. I feel that this went against Hisoka's character as a magician with lots of tricks up his sleeve. It should have been a huge event that shocked both readers and the characters in the series, with everyone being dumbfounded over how Hisoka escaped certain death.

The plot is that the world is full of ambitious people after something. Gon wants to find his father, and Killua accompanies him in a search for a purpose. Leorio intends to get rich after graduating from med school. Kurapika seeks the stolen bodyparts of his brethren and take revenge upon the Phantom Troupe. Hisoka wants to fight and kill strong people, and is after Chrollo for most of the story.
While the other characters go off their journeys, Gon and Killua tangle themselves in a few obstacles that turn into adventures, since Gon's father is a very absent and hard-to-reach man.

Cool setting, well written villains, hard magic system, the plot doesn't fall apart at the last third, deals with serious themes in an intelligible way. It's not the pinnacle of anime, but it's definitely of higher quality than most, and there has to be some series that is well received by the mainstream while actually being good.
