The reason why Chaldea have to collect grails is because it is the cause of every singularity. In the main story, those grails are all Goetia's. I don't really think this is stupid, convoluted reasons.
About the story only told through dialogue & character portraits thing, they have improved it a lot since Camelot chapter with a lot of monologues, sound/animation effects and new CGs (Bedi, Goetia, Mashu, Kadoc, Ophelia, Yu, Surtr, David Bluebook, Salieri,...). Heck, remember that Excalibur Morgan vs Lord Chaldeas in Fuyuki with just NP animation and doesn't have any narration ? Now they made more CGs as well as text/monologue when servant using NP like Napoleon, Surtr and Bryn in LB2 or when Mashu activating her Ortenaus form for the first time in LB1 against Ivan. I know that FGO isn't a god-tier work with perfect story or something, but it clearly has been changed a lot anyway.
