I don't think that SnS was built to last a thousand chapters. It's not a battle manga where heroes fight to save the city. It's a manga about a guy learning to become an elite chef. It's a character arc manga. Character arcs don't have infinite momentum, and you can't just follow up one arc with another after another while keeping the appeal. In SnS's case, people were interested in seeing Erina's demeanor melt like butter, and once they got it, they stopped caring.

The author should have realized what kind of story he was telling and its limitations when taking pacing into account.

Monkey (both the chracter and the arc itself) is better in the manga than in the anime.
