Impossible. You need a techniques of cinematography to recreate the feel of scale. Unless you have a very big budget, all you can get in anime are panning shots, close up shots, looping animations or worst, still image with speed lines.

I think it's just the limit of animation. In Ghost in the Shell most shots are fixed, like a observer in a middle of the road. While it shows the city as someone who lives in it, it just shows a part of it. Most directors rely on background art, like a watercolor painting of the city but that just feels like a memory of what the character's perception is.
In Akira, the animation is superb but the buildings moves in a 2d parallax without minding the 3d effect and it just looks like a pop-up book where you can move the backgrounds independently.

Based OP. This is something that always bothered me about anime and manga, this world depiction from pic related is rare to find. Isekai is shit and fails at this most of the time.
I will however tell you that a few animes and mangas did manage to capture the feel of pic related but the only one I can think of now is The Vision of Escaflowne.
It's not the greatest in story coherence but it excels in delivering the many tones and essences of various grand worlds.
Other anime just does it half assedly: Princess Mononoke manages to deliver a feel of grandure of the endless forest and some ancient mystery but fails to keep up with it, even ruins it in the end.
The Logos War delivers the feel of your pic related occasionally. Even this new complete shit of an anime Castlevania managed to deliver a few moments but overall it's an uninspiring shit show compared to all the others I mentioned.

Helck and Anne did spend an entire arc traveling back to the demon world, of which we haven't seen the empire/capitol or the northern front. It isn't perfect, but it's there. The scale of the human castle in particular made me uneasy at times.

What a load of horseshit. In what way are the distances in dialogue only? Huge amounts of panels are dedicated to present characters walking through this vast world. On the other hand there is barely any time reference (except few mentions in a dialogue and in appearance change) and maybe thats why you are having troubles grasping the distance because its hard to show it from a perspective of a milion times smaller unit traveling at low speed. Killy can destroy a lot of things with GBE but that doesn't nagate the scale but helps putting it into perspective

You have Reg as the audience surrogate, who notices how wrong everything is and how insane this all is.

The story is essentially structured around meeting the 5 White Whistles and learning from them.
We met Ozen, who served as a mentor and who, due to her trips got more and more bitter and depressed and now is barely doing anything herself anymore.
We met Bondrewd who is completely terrified of something bad that will happen in the near future and is desperate to find a solution for this problem. Bondrewd is an incredibly tragic character, he's essentially the embodiment of the sunk cost fallacy. He threw so much at the abyss to no avail, but he just can't stop. At least without someone from the outside making him.
We haven't seen Srajo and Wakuna, but they'll show up eventually. Maybe Srajo won't, that would be quite funny.
Lyza is obviously the endgame.

And then there's Riko who makes everyone else look sane.

Made in Abyss is not about the murderhole, it's about the people sifting through the murderhole and their reasons.
