If you just want Nishikata/Takagi stuff, read the manga. The anime actually adapted two manga at once, because those segments are from the author's spinoff manga, Ashita wa Doyoubi, which focuses on those three girls.

I think of it more as adding variety to the anime. There are very shows where I can watch just one or two characters talk with each other every single episode and that be the entire anime. Makes me think of Tanaka-kun, where the first episode was just the main two boys the entire episode and I wasn't entirely into it, but after they introduced a few more characters, it got much better with different character dynamics and such.
So, I think it was the correct decision to cut between Nishikata/Takagi and the other girls every so often. Same for when they have Mano and her boyfriend in a scene.
