It's not necessarily off camera. Most anons might not agree with each other, but I think they could each make a decent case for their preferred quint's relationship with Fuutarou making sense in the case of a reveal. There're a lot of moments where his relationship with each quint "advances" so it's mostly a matter of reframing them, whether you're a Ninofag that thinks she's making headways in turning his head or an Itsukifag that thinks their growth moments are mutually shared.
Having it be a later realization means that the competition can keep up for longer without an obvious winner revealed in monologues and it's not hard to imagine Fuutarou coming to like someone and holding off on doing anything until he's more comfortable with the situation.

It's not a central theme to the story at all. I agree with you that it's not really what Negi is trying to get at. That being said, 7 goodbyes is the most important arc to the story. It's not about moving on from your past but accepting the present circumstances and looking ahead for the future. Not so much moving on from, but not dwelling on a past that won't return. A Yotsuba end would need 3 volumes worth of development at this point to be a satisfying ending.

The past is never actually treated as a bad thing. The first numbered arc of the series is resolved by the importance of the past and reconciling with it. Fuutarou's separation from Lolikano is undercut by the fact that it's his connection to her that's saved him on multiple occasions and supported him as a person. At the current point in the story their separation is even being treated as a mistake by Itsuki. The story's longest myth arc is about the impact of the past on shaping the characters through Mama Rena's absence.

The propagation of this "let go of the past" theme is a shitty meme for midwits. The past is extremely important and carrying it forward is much more important to the character arcs than the idea of letting go of it, since it's intrinsically tied to the character's connections and every character who's tried to sever those connections has been painted in a bad light.

Near as I can tell, one of the most important themes of the series is to stop living in the past. That doesn't make the past a bad thing, but it does mean that you should understand that it's already happened. You're not going to get it back. You have to be able to move on without rejecting it. You have to appreciate what you have now and keep an eye on the future. In some ways, that means learning how to reconcile the past with the present and what's to come.

If this is true, or mostly true even, then the two most likely bride candidates are Nino and Yotsuba. If Negi's hiding the bride in plain sight, the two easiest ways to do so, I'd think, are to lay a whole bunch of obvious clues and give the bride a ton of screen time.
