Everyone and everything feels a little off in Super, to be honest. They're kind of in line with how they act in filler (anime only) stuff from previous DB shows, though, in my opinion.

Goku had kind of reached that point during the Buu Arc, he was a more laid back chill old man trying to pass the reigns to his children so he no longer had to protect the Earth by himself, in Super they completely removed that character aspect from him and returned his mentality back to his when he lost to Tien at the Tournament.
its because the focus is back on goku now. The majority of Z was on Gohan and Goku training then rushes in to save the day. Now The focus is back on Goku and fans become disillusioned by his antics. Remember Goku could have destroyed the andriods before they showed up but instead trained to fight them fair and square. Then there was letting Gohan take the reins and that didnt work out either.

This is something the latest movie sort-of addresses, early in the movie Goku is laidback to the point of absurdity. He doesn't even give a shit that Frieza is collecting the Dragon Balls. It really seems like they're trying to imply that Goku is becoming less mature as he grows more powerful.
To be fair, the villains were always coming to him. Like I said the focus is more on Goku now. Plus we have Vegeta taking a huge step forward in the spot light as Goku's opposite. Goku needs to be a dope if Vegeta is going to join the story full time.
Or and hear me out, Goku knows that no one will want to wish for immortality. Goku always relied on the balls over the years, and I think it got to the point that even the balls effects aren't that big of a deal since He uses them so much. Plus then there is him being over confident in thinking that he will find them or get the even stronger dragonballs to fix everything.

It has nothing to do with Goku being in the spotlight, you are completely overlooking vast swaths of the story where Goku was pretty much the only one with screen time, they have been dumbing Goku down and turning his personality back to what it was while he was a kid, and at the same time having Vegeta rehash his character development from the Cell/Buu Saga, because Vegeta reached the peak of his character arc and Goku's character arc was nearing its end they had to force the charcters to regress so they could fit into the story they were crafting, instead of crafting the story around the characters.
most of the time goku came on screen was to save gohan after so many times of getting fucked up. Goku's whole character relied on being tied up doing something so he could train then arrive to save the day. After that it would switch over with Gohan and him growing up. Then super came along Goku was the main focus again. Simply we just saw Goku more and thanks to that we saw him being dumb more.
That is factually incorrect, Goku is not some magic wand who shows up for plot convenience, and you keep describing it as if Gohan was the main character, did you even watch/read Ball/Z
