This for most fags, but it was the archer stuff in ubw plus shiro's projection that I liked. Honestly I'd never seen anything like it in the way they'd done it before, so it was refreshing despite otherwise being cliched. Also loved HF 100% and I don't know why. It was just done right

Blame Nasu and his bs retcons in the form of alternative timelines/universes. Even a slight inconsistency with his works that could be easily fixed, he regards as due to AU shenanigans like he did with Fate/Zero.
It has some great characters and some great stories.
That's enough for it to be remembered fondly and stand out even if the rest is mediocrity with powerlevels and waifus. Because most series can't even manage that much.

Almost every Fate works (especially FSN and F/Z) has a stable popularity but the whole franchise has become far more and more and more popular all thanks to FGO, especially in Japan.

It's well directed.
This is not the same as well written.
Its scene structure, its character development, its framing and its revelations, how it opens up its world to the reader piece by piece, leaving each scene a surprise, making you constantly look forward to what happens next, what next amazing thing will dazzle you. These are all top class, especially in the original Fate/Stay Night, which has completely magnificent structure to it, albeit with some pacing issues when Nasu wanted to talk about japanese cuisine. (But even those are meaningful moments for the main character.)
It just has a really, really good arc to it. Its prologue has strong hooks, its rising action builds tension, and its climaxes pay off its foreshadowing and expectations in full.
Very good direction. And good direction can salvage some terrible writing simply because it makes the experience a rewarding one. Then, when you get something well directed, you want a sequel.
FGO is, not Fate.

The problem with your post is Fate =/= FSN, it is not a visual novel but big franchise with different type of works. FSN, despite being the first Fate work, is just a part of Fate franchise after all. And FGO's popularity can also be counted as a part of Fate's popularity anyway.

F/GO is massively popular. Not Fate. It was the gacha shit that brought in over a billion. Sure Fate was popular, but F/GO took it to new levels.
