Because manga is for teenagers. I've experienced the same thing you're going through. Loved all sorts of manga as a kid, now a decade later I'm tired of all this childish garbage. There's like 2 manga I'm reading and honestly I only come here out of habit. Don't really understand anything on this board anymore and it's so incredibly obvious the average poster is at most 18 years old. Children.

Teenagers are common in shonenshit and highschool SoL.
There are plenty of adult protagonists.

In Japan life ends after highschool, the salarymen working 15 hour days want to revisist those days, so they all read/watch isekais with teenagers to vicariously live.

because you need to actually be good at writing stories if you want to engage the adult demographic using adult protagonists
Teenagers are simple, fix them a masturbatory power fantasy story (e.g. isekai) and they're good to go.
Pleasing adults using young protagonists is also simple, but writing a good adult protagonist is fucking worlds apart
