Somewhat generic yet stylish noble armor. No fancy shit or accessories aside from the cape

Next to never probably. Unlike chainmail bikini, it doesn't have the glaringly obvious fetish elemnt to it. The overall design is in the relm of realsim, it has an inuniverse explanation of magic boosted strength to negate weight and such. On top of that the design itself is competent at emphasiszing the femininity and knight aesthetic. It also has enogh loose flowing elements to look impressive when animated.
Sure, Arthur's looks way better imo, but classic saber is perfectly fine, visually/

Outside of Guts and GS, I don't actually remeber any msin characters that wear helmets in fantasy or realistic sttings, period. Fuck, just make it a distinct helmet that stands out enough, since the armour is also probably gonna be somewhat distinct and you're good!

Also, it is kinda hazy, but if I remeber correctly, in VN he did cut through the armor, but that bent the blade, so there was a relative safespot between the 3 strikes, which Saber used in their last fight.
In UBW anime he couldn't cut through the plate, so Saber angled the armored part into the strikes, effectively having to properly parry only 1 of them and tanking the other 2. Sasaki lost their final fight there specificly because he had no mana support anymore and was running on fumes for their last fight.

Don't know about that but I remember in Fate route Saber mentioning how important her armor is to shirou and it helped her from getting more injured or outright killed in the 1st fight with Berserker
