The issue is that she suddenly grows new personality traits as the plot demands, some of which go completely against what was previously established, and most of which come without any foreshadowing, even the ones that totally should.

The biggest example is between volume 3 and volume 7. In volume 3 Darkness couldn't give less of a flying fuck for noble procedures and is perfectly willing to ruin the Dustiness name in order to scare Walter off. Then comes volume 7 and now she's practically obsessed with following the "proper procedure".

Then there's stuff like volume 10 where she's perfectly willing to use underhanded tactics to achieve her goals, and then comes volume 12 and the book treats her learning how to bend the rules like it's some kind of grand revelation.

In fact Volume 12 is the absolute worst when it comes to her character. Not only does she gain a little sister character out of nowhere, not only is she suddenly a teacher for an orphanage despite that not coming up even once in the past 11 volumes, she also completely changes her base character. If you start at volume 12 you would not think that the Darkness shown there is the same character that appeared in volume 1.
