Overlord is miles above average isekai LN. The amount of discussion worldbuilding and setting generate are testament to that. There is close to zero details on how the kingdom operates, how is it divided politically and economically, where are the major trade routes, what is the kingdom producing\selling\buying and who are its trade partners, how are traders organized. Is there a banking system, what are the major currencies employed by it, what is their exchange rate. How is the justice system organized, who operates the logistics, are there any professional guilds aside from their generic MMO adventurers guild. What are the major noble families here, what are their histories, why are they in power, are they involved in any conflicts with each other or other classes of society. What religious groups does the place have, are there any official religions and why they are here, are there any banned ones. What are the languages and dialects of this kingdom.

Very few of these questions can be answered in a very vague\speculative way after reading the books.

His world is big but not particularly refined or well-thought-out, and he relies too much on typical D&D/isekai tropes. 12 Kingdoms, LotGH, Shin Sekai Yori, GitS, PsychoPass, FMA, and Aria all come to mind as examples of superior world building.

It's really not. It has nearly all the bad tropes isekai LNs are known for. The side plots are almost never brought up again and the main plot is almost completely inconsequential. Even the world building feels like so much set dressing and isn't very cohesive.

You can't please everyone it seems. Overlord is interesting because of it's dynamic contrast between the perspectives of the NW, and Nazarick. Neither are particularly interesting on their own. But seeing the two interact is what really makes following this series so fun. It can simultaneously be a grim dark fantasy story, and a dark comedy at the same time. Of course those who have never read the LN, or only watched the butchered anime adaptation wouldn't understand.

My goal with this series was to see what's this isekai stuff is all about, are there any differences from the classic western stories about people being brought into a completely different magical place (Like Alice in Wonderland, Wizard of Oz or Gulliver's Travels) and is it any good, like the stories I've mentioned.
My enjoyment of the series has ended when the author started to describe the New World because of how stupid and unimaginative it is. I don't really want to invest into another(bad) version of Faerun, because of how many times I have already seen all of this crap. The fact that now it is heavily infested with RPG elements only adds to the problem.

As I have said, I wanted to see what Isekai genre is all about, I have never read a book that actively uses RPG\MMORPG mechanics in it, because even World of Warcraft novels are not doing it.
Very first chapters of first volume were interesting and original to me just because of that, and because I have quite a frame of reference on fantasy and recreational books in general I felt the passion the author had for his work.

Overlord is a very generic and boring fantasy franchise that has unimaginative story and a poorly written world that consists of unrealistic kingdoms with no proper background or social structures in them, everything about it is very MMO-esque, as in shallow and basic.

All of these problems are being happily ignored by the fanbase that consists of people who really, really, really like all the fetishes, power faggotry, edginess and MMORPG stuff in general.
This by itself would be fine with me, but at the same time you guys are trying to hail Overlord as something that has "great worldbuilding" "engaging story" and "character development" and none of this is really true.

So it needs to live up to your autistic standards of detail, in order for you to even consider it to have good world building? Overlord's world building is done from the perspectives of the inhabitants of the NW. It isn't this in depth commentary about the nuances of the currency between kingdoms. It has more to do with what is relevant to that particular character we are following. We have details like family history, careers, goals and aspirations for every character introduced. The world building is done in these little snapshots from the inhabitants, from lowly peasants, to high and mighty nobles. This isn't a lore book. It's more organic than that, and requires you to speculate a little about the small nuances that are brought up.

Seeing the inhabitants of the NW react to a mysterious overwhelming power. Interactions between characters from completely different backgrounds. The comedy that comes from Ainz fucking things up, but managing to make it work in the end. Exploration and speculation concerting the NW, and it's history. I've always been particularly interested in the NPCs interactions with the inhabitants of the NW. There are a lot of things to like. Just the fact that it's told from both perspectives allows it to be a dark fantasy story, while simultaneously being a comedy.

You are confusing world building and character backstories. Pretty much every character from any given book/show/movie/etc has some backstory to his name. These are not world building. These are, as you yourself said

The quality of those is also debatable, "a peasant who was trained by a mercenary to become the strongest warrior in the realm, won a tournament, got noticed by a king and was then accepted into his service (without being knighted, because in this world peasants cannot be knighted even by a king, which technically would prevent any people from becoming nobles in the first place, but oh well) and is now absolutely loyal to him out of respect" is not really a very inspired, fresh or interesting backstory. As in, he seems like an archetypical "king's loyal paladin of virtue" and therefore I am not really interesting in his actions or his fate, because it will most likely be the same as that of any other "king's loyal paladin of virtue"
One way of making this character original and interesting would be to show some negative traits of his. Maybe he is greedy, maybe he is violent, maybe he prioritizes king over country and therefore has no problems oppressing disobedient peasants. Maybe he is prideful to the point of it being a sin. But instead we have this idealized, childish version of a perfect, noble and loyal soldier, which makes him uninteresting and predictable.
Well, so for you it is mostly about power fantasy and at the same time you are not taking it all too seriously, considering it to be more of a dark situational comedy type of thing.
Fair enough, I have noticed both of these things throughout my own experience with overlord, and whilst I myself am not really interested in overwhelming power as a plot point, a do like me some dark comedy.
Unfortunately, for me the bad things I was talking about outweighed the good ones.

Make it an interesting "info dumping" relevant to the story, combine it with comedy, tragedy or clever writing in general.

Unless you yourself think that it is boring, and are uninspired by your own creation. But that is really an unsolvable problem, that can only be addressed by abandoning your work and writing something else instead.

Gazef has his own issues about not feeling worthy enough for his title. His constant battle with the nobles who constantly try to undermine the king. Him worrying about the future of the kingdom, and the common folk because of his connection with them. Gazef finding respect for Marquis Raeven, a noble he had despised, but eventually admitted he had gotten the wrong impression. His respect for Ainz Ooal Gown, even after finding out he was an undead. His friendly rivalry between him and Brain. It may not be all that exiting, but Gazef had a realistic character going for him. He was a guy with a duty to uphold, and was chosen by the king for a good reason. Cliche? Maybe a little. But was he realistic? I believe his character was believable given the circumstances.

All of these are perfectly consistent with the archetype, which raises my previous concern about the author not being interested in the character enough to write him as a character, and going for "okay, he is a typical loyal paladin, so what would he do in this situation" way instead.

Not really? He just demonstrated his strength by winning a tournament.
It would have been much better if he had a track of heroic deeds to his name for king to even consider making him his champion. Combat prowess by itself can be a positive or negative trait. You wouldn't want a person without a proven record of serving the kingdom to stay barely a couple of meters away from the king, holding a huge sword that can cleave the monarch in halves.

All of which would make it pretty hard for them to ever play EVE, the game that is based around these things. In fact, it would be the hardest MMO for them to ever get into.
To play EVE in an efficient way you do have to have a great amount of patience, but also a certain degree of intelligence and an ability to socialize with your dudes, because you will not be able to get anywhere in this game without a strong collective.
