The more I read and the less chemistry there seems to be between the two characters, the more I think Subaru is either cursed to love "the witch," or Tappei is saving a shit ton of character development for later and didn't want to blow his wad early.

Best case scenario, Subaru has to banish or kill Emilia himself, just like the heroes of old had to do to satella. But, instead of having BAD END, Barasu gets Rem.

I can't figure out why Rem would be so important to Subs otherwise. I read the trial of the past and how he described the memory of Rem pushing him forward, allowing him to beat his past and see his self worth. It doesn't make any sense to have her not be the main girl, especially with how emotionally distant Emilia is.

We already know Subaru loves Satella so yes his love for Emilia is probably caused from that

Option A: The replacement scene they had was still fine for conveying that he loved her. It's not as explicit as the LN/WN, but when I was watching it with no knowledge of either of those things I took it as a successful and mutual confession. It was about as reasonable as your average 'romance' anime gets by the end of it, because the Japanese are super bad at that. Then there's that he asked her to run away and be with him. Yes he was desperate, but he wasn't doing it just because she was convenient, he cared deeply about her, as evidenced by the previous few loops that really showed him what she meant to him. Plus the series is going to have to start off with 'Who's Rem?' which is only brought up because he's going to tell Emilia about his feelings for Rem. If he just brings her up randomly like 'Hey Emilia, I know we just had this moment, but can I take a minute to talk about how awesome my BEST FRIEND Rem is?' it just doesn't make sense as a way for the conversation to flow.

Option B: They add a few more things to show how much Subaru really cared, especially now that she's gone. It's a bit lazy to say 'he really did love her romantically after all' as sort of narration, but whatever.

The other sins all seem to have multiple effects. I wonder if his Envy does something besides RBD. It would be funny if he eventually learned he didn't need to die to actually use it. Or if he could manually set spawn points.

But the 2 wifes talk with emilia was cut from the LN

Sort of, Pete only has his hands (LN/Anime/Manga), Sirius only has her emotion sharing (Fire is likely her magic, she's fire aspected like Emilia and similarly to Emilia and Puck, previously used this to create ice), most of the weird shit Capella does is just an extension of her one versatile power. Regulus only really has the one ability, with something to make it usable, but it's not really a separate power on it's own because it doesn't do much but be the prerequisite for using his other power. Al only has his one shown ability, though it can be used in two different ways.
Only the Gluttonies seem to really have a lot of things they can do, but it's possible all of those are extensions to their single eating ability due to being able to steal skills and techniques with that.

One is he likes her a lot, one is that she's important to him, either could mean 'love' and neither is the unambiguous love aishiteru.

Oh, I just realised why Subaru doesn't forget Names of people. We know via Beatrice that the authority doesn't work when you're in a isolated pocket dimension like the forbidden archive. Satella is sealed in some kind of pocket dimension so her Envy factor works on Subaru remotely from there. So a part of him is always connected to a pocket dimension making him immune to forgetting. Also, that's the reason he could always find Beatrices Door, because he has an affinity for pocket dimensions.
