Lots of people watched it on Adult Swim in the early 00s and its reputation has just been held up in the past 15 years or so. It's more people just going into it after hearing it's the best thing ever and just going along with that opinion.

I'm mixed on it, I had to watch it a few times before I really appreciated it more.
There's an inherent coolness to it, its well animated for its time, the soundtrack stands out ,when its on form it can be worthwhile watching and the finale is goat.
But it can never really match its strongest episodes, Ed can sometimes be annoying, its not always as success a slow burn as its often remembered as being.
I watched trigun and outlaw star first, which initially effected my opinion on bebop.
One of the few anime that doesn't do lazy ora ora ora style animations for every single fight scene. Also hating cowboy bebop in general is pure contrarianism. I have never heard a legit criticism of the show. It's always hurr durr episodic shows suck!1
It has a really good ending
Too bad the characters, except for Jet, were barely characters until their respective final episodes.

There is no actual good criticism of Cowboy Bebop, it is all either plotfags or contrarians. It looks consistently great, it sounds great, the voice acting is fantastic, all the characters are fun and have a purpose, most episodes tell complete and fulfilling stories.
It is one of the few shows that got very popular and deserved it.
Though Americans liking the dub is pure nostalgia deafness.

Story going to fucking nowhere, the characters are boring, except for jet. Spike is a tryhard faggot. Many episodes are just fillers. It was very boring in general.

The plot is a valid reason to consider it overrated. It's not a valid reason to consider it bad though. Cowboy Bebop is a good, high quality anime, but it's not the masterpiece everyone makes it out to be.
The plot isn’t a valid reason because that isn’t what the show is trying to do. The show isn’t about the Vicious and Julia story, it is a side story to the overall story of the daily lives of the Bebop crew.
It is like faulting a comedy for lack of drama.

Thanks. Cowboy Bebop unironically makes a lot more sense if you frame it as a unorthodox slice of life rather than a typical action series.
But Faye is the most developed and dynamic character in the entire show
Jet gets like 3 episodes for himself. Two of them are just showing that he hasn't learned anything from the failures of his past and the third is universally considered the worst episode of the show.

But that's what's great about the Cowboy Andy episode is how Spike gets exposed that his coolness isn't as effortless and unconscious as he makes it look.

It's a month-in-the-life-of 3 people and a kid exactly at the moments in their lives when they needed to make a new decision to move on with their lives.
It's literally designed to have a plot that goes nowhere. They aren't going anywhere, because as soon as they do, the show ends. We just get a peek of an inner-solar-system meet-n-greet with great jazz.
Ultimately, you're wrong anyway: the story does go somewhere, for all of them, and as soon as it did, it wasn't interesting anymore.
