Basically their spirit gets pulled out of their dying body and they get offered a second chance if they pledge allegiance and promise to spread her name through the land. She chucks his spirit into the world and his body is formed of whatever he lands in. He lands in clay and as the system stabilises around this intrusion he becomes a clay golem. He ranks up into various types of golem from clay to stone to iron and beyond but everything he does he tries to spin around to her as it levels his Paladin job and as she gets stronger he's able to do more things. In this system monsters don't evolve he can only do so because she blesses him when he hits a certain quota of Faith for her.

I have ideas for two gender-bender isekai:
1st one is MC being taken to the RPG-like world by mysteriously-MYSTERIOUS ghost demon girl: his cheat skill is taking (parts of) appearance and strength of specific (dead?) people – his first appearance he can take is that of the demon girl. He himself doesn't actually get stronger without transforming and initially he can only take someone's FULL appearance – and since he can't just roam around as a demon girl, he has to endure being a weakling for a while.
2nd one is a guy being born in a fantasy world after death. He lives a pretty bland life for a while. He doesn't have much talent in magic, but it's enough for him to get a guardsman job. One day a fucking dragon out of nowhere attacks the town. He runs away as a coward, leaving tons of innocents to their death, trampling over whoever gets into his way. Cold and hungry, he meets a random girl who shields him in her home in a nearby town. The very next day he wakes-up in her body and get arrested and sentenced to death – turns out that girl was some sort of a criminal who stole his body and thus pretty much left all the blame on him. Hopefully for him the girl wasn't known for using any magic, thus he could break the handcuffs and escape from the prison.
I doubt I'd ever write anything, though.

I also have non-isekai idea for a cinnamon roll half-elf loli who would eventually turn into ruthless murderhobo. Maybe I'd actually write this one some day.

I didn't think it through that far, so that's why I didn't bother even starting writing. It's just an idea of mine.
Well, his first goal would be to escape, obviously, but the problem is that the previous owner of the body (that girl) killed some big shot among King's/Emperor's/Whatever's retainers, so there's a juicy bounty on MC's head.
The problem with taking his body back would be that only that girl is capable of swapping bodies and she has no desire to give it back to him. Not to mention she keeps stealing bodies from other peoples, so by the time MC finds his old body, it's already possesed by another victim of that girl.

depends on the source, the most common forms of vampire mind control are a close range "look into my eyes" thing that may do anything from blank your mind so they can do stuff to you that you wont remember or straight up mind control.

You could make it work if
A. the protagonist doesn't die very often. Maybe once every 20 chapters or so.
B. you have an interesting plot. Obviously "dude dies and gets reborn in a new world" is vague as fuck. That's basically every isekai ever. You will have to work out the actual plot, not just the idea for a setting.
C. the protagonist isn't the only one with this "power", but on his journey, he meets a few other humans that have been reborn the same way. and maybe these humans get reborn along with him in every new world. That way, you have a cast of returning characters, but they meet new people in every world. Think of it as how in One Piece, you have the strawhats, and they meet new people on every island they travel to.
