Yea but with Asta having anti-magic, he's a natural counter to basically any magical with a physical form, which is most people. You don't need to scale the powerlevels to keep Asta strong. You can make it like JoJo where a fight is more about figuring out how to beat someone's ability as opposed to beat them with raw power.

The show is ultimately very faithful to the manga. If anything the anime's single saving grace is some of its filler, which gave backstories to characters who didn't have them (Marron and Magna, for example) and showcased some interactions that were never touched upon in the manga. Witches' Forest is a big one too, as the three characters introduced in that arc come from a light novel and were left unelaborated on in the manga, whereas the anime covered it a little.

You don't have much to lose if you start from where the anime is at, though Tabata's art is fantastic and so I'd really advise starting from Chapter 1, as the anime does very, very few of the scenes with his artwork justice.
