Mahjong has a really big learning curve involving skill, danger assessment and reading. A noob can win one game with enough luck, but a skilled player will always get better results on the long run. Even after 1000 games there's still stuff to learn.

Pretty new waifu mahjong game and people in bronze leaugue also don't know what they are doing and are just calling everything to just be either furiten or yakuless.
It's fun and you will just learn while playing, just make a habit to have a yakulist somewhere and always look at an opponents winning hand and try to recognize the yaku.

Yes, mostly you keep it closed to organize a hand, since some yaku are closed only.
For the begging you could try to call only for yakuhai triplets and built up the hand until then. If you have one yaku and are open feel free to call everything like a madmen.
