Though I love Kimetsu no Yaiba and Nezuko specially, you have to admit that Nezuko is not much of a character but much more a plot key and heck she acts more like a mascot character than anything.

Black Clover is not the best manga I've read about good written females but since you say currently running on WSJ, it's definitely the best one.

I read both KnY and BC from times to times and love both way the series presented their character, but pointing out BC's girls being the best in WSJ is just really not true. I don't enjoy Noelle shticks but I did like Mereoleona over others just for her attitude alone.. Onto Nezuko, while her demon form mostly nulled her intellect over all in the series, but her personality is shown through glimpses of the past, from the first chapter where she covered her dead brother, to later chapters like mountain or Daki, she's shown to have an unhealthy consideration toward her family that she'd forsake her own well-being. She being turned into a demon doesn't hide the fact that she has a caring personality, whether it being human or demon Tamayo and Yuishirou if it fits her narrative, then she'll go all out just to protect them.
Also, she wants to be spoiled and pet all the time

You don't have to be so defensive about it user, it's hard to argue that Nezuko's not much of a character.
Basically all her scenes outside of a couple plot relevant bits, are just being a cute mascot, or being angry in combat. Even after the recent development of the Sun we've had barely any scenes of her and Tanjirou interacting, and this is one of my few issues with the way Wani has handled that plot point.

It's 2019 bro, shounen can get normal adaptations with year long breaks now. The pressure on the mangaka to stay ahead of the anime is way lower and you can have tighter storytelling. You can just follow the show yearly.

I want to add a few points to thisThe humor in this manga is fucking nice. I never expected a manga with this kind of setting has such good comedy.
However,battles are extremely tense. Violence is very raw and brutal. Nezuko is sliced into pieces at one point. The manga also doesn't hold back on the good guys casualties. No matter how hard the MC and his friends try, people will die under their watch. Human's fragility is kinda a theme of the series.
The main and supporting cast are both colorful and likable. Even the supposed edgy rival guy turns out to be a very nice dude. Not to mention that the girls, though few in numbers, are pretty nice, and they do not orbit around the MC, nor the MC is reduced to a retard around them.

Ufotable are clearly taking a lot of inspiration for the visuals from Ayakashi/Mononoke. I think it's great, it's a visual orgasm and a great showcase in how you can use CGI to enhance your 2d animation rather than replace it.
But they're also doing a terrific job with the soundtrack, it could carry a bad adaptation by itself, and this isn't a bad adaptation. Honestly so far I'd put the OST for the Kimetsu adaptation very nearly on the same level as the '95 Berserk OST by Susumu Hirasawa, it's been that good.
