I feel season three would be in a wierd place where it wouldn't have enough time to adapt Minefield Mahjong+Kazuya+One Poker in two cours but would be missing enough content to just adapt the first two.

Watching Akagi is one of the fastest ways, the akagi mega video on youtube has annotations from the subs explaining rules/hands youtube.com/watch?v=b75FTpdZCZM. Akagi starts not knowing how to play so the audience learns with him (Admittedly we learn a lot slower then him). Either that or use the flash mahjong game gamedesign.jp/flash/mahjong/mahjong_e.html. Play a couple rounds until you remember hands then if you feel confident jump into mahjong soul or another site.

It's kinda hard to learn with Akagi, you should definitely try to play the gamedesign flash game or read a guide like mahjong.guide/a-beginners-guide-to-riichi-mahjong/
