The problem I have with that is still that I know Japanese work culture is "stay at work for 10 hours, effectively do 2 hours of actual work" because their society revolves around "appearing busy" rather than actual constant labor, so I must question the "works 10 hours a day on his comic" meme on that basis. There's no way a mangaka who only has a chance of making decent money if he gets successful is doing more real work than a fucking salaryman working for a big company making big jap bucks, otherwise there would be no incentive to do it.

I don't think that applies to home office where you don't have your corporate overlords cracking the whip.
But that still means he's unlikely to be working constantly for 10 hours. It's probably work a while, take a rice break, work some more, count it all as "on the job" time.
Because those breaks are probably 15 minutes and the chart counts 1 hour slots.

Except that that particular field (comics, manga) is actually very intensive. Every major publisher has expectations that you will be able to answer deadlines. I think stateside your average comic book author has about 3 weeks to turn out a 6-10 page strip. 6-10 pages, 3 weeks.
That includes making your storyboard, composing your panels, doing your backgrounds (because guess what? you can't afford an assistant when you're trying to break into the field), and, you know, actually writing your story.
You've gotta draft your pages, outline your focal points/characters, ink them (color them too, depending on what kinda comic you're doing), and still have to get them approved. You can't just drop your stack of shit on someone's desk and expect them to stamp it APPROVED. Your editor becomes a necessary part of your process, so you've gotta work with him too.
Honestly, it's not surprising that someone drops dead at 29. It has to be one of the most tedious career choices out there. Everyone thinks it's all roses and big money, with deferment of misc. shit to an army of assistants. It's not. You're putting in serious time, effort, and thought--all the time--into whatever story you're trying to make. Little wonder why writers like Kishimoto go off the fucking rails with their storylines--they do not have the luxury of time to write anything decent.
Oh yeah, and you can't afford to be a slow drawer either. You have to average a solid page in 6-8 hours, otherwise your potential publisher will hand it back to you 9/10 times (unless you draw like Muira or something) and say, "yeah, 10 hours is too long. You need to improve your speed and efficiency."

hell I've been wanting them to change weekdays to 10 hour shifts so we could get 3 day weekends instead. Though I doubt that will ever happen but I'd rather work an extra 2 hours for an extra day on the weekend.

Despite the memes about Japan the Japanese have measured lower average hours than Americans at least a few times in the past decade. It's mostly a small part of the workforce, mostly white collar, that works over 60 hours. It is high, iirc like 8-9% of the work force worked over 60 hours a week on average. The US and the richer EU nations like Germany had 4-5% working over 60 hours. But the US has a higher overall average total hours worked per year per person.
Western media and western facing japanese outlets have created a microcosm of Japanese culture with their overtime memes. It affects a relatively small portion of their workforce in a disproportionate manner, which isn't great, but it's not that crazy when you consider it's within earshot of the west and those stories of people working crazy overtime are one in a thousand anecdotes. I mean just think about doctors in the US, or guys in tech working server development and support who could be on call 24/7 if something goes wrong. They also work crazy hours sometimes.
If you want to talk about real crazy hours South Koreans consistently chart in the top 5 most hours worked a year and have crazy over time and have the highest suicide rate in the world. Japan's in general just a little worse than the west and in many ways comparable to the US. Korea though, nutjobs

Why don't small studios work on manga the way that studios work on anime?
Simply dividing the labor more effectively beyond the mangaka and his assistants would make things far less stressful.

because other authors that are known to have assistants are usually working under Weekly Shonen Jump, and the WSJ actually provides the assitant to their authors if requested. Other authors who do get assistants usually pay for those assistant's works.
Separating writing and illustrating duties is not really a guarantee that the work won't be dog shit. Most of American comics are still doing the Writer+Illustrator tandem and still most of the US comics are still dog shit.
