I'd rather they take their time on something good than rush it. There has been a never-ending flow of official art and merch in between the gaps. Unfortunately s2 just wasn't written that great, and had a weird lack of animation bumps unlike s1.

Interviews revealed that the skits the writers had planned for a potential s2 were scrapped and made into Drama CD skits, which explains why some of them are wasted potential.
I will say that even during 2016-2017 there were Drama CD skits released. I personally really don't think it was that long of a waiting period. Lots of series go much longer or never make more seasons at all.

I think a weakness of s2 is that they threw away the slight hint of continuity s1 had. The attitude of "we can reuse Jyushimatsu's girlfriend and not even acknowledge it because it's a 'skit'" is a shitty move. I try not to get too invested, but I can't help but want to cling on to what "canon" we have.
I think it's likely. I only hope that it's better. At least the s2 finale was better than the s1 finale, so even if there isn't any more it still ended on a good note. I do think there's a whole lot of untapped potential though. For instance they can keep the status quo by having them all jobless by the end, but try having them try stuff, and stick to stories that amount to something more than one dragged out scene.

They really overdid it, stuff like the Three Kingdoms skit were unfunny and dragged on for far too long.
That said I think s2 ep 1 set the bar really high. It also made a hilarious scenario that was still "our" matsus (so it mattered), and had some really fun animation.
I've been trying to avoid the term but s2 was surprisingly lacking in the sakuga department. Season 1 had even some at-home scenes be lovingly animated, and it really added to the humour and charm of the show. For some stupid reason s2 wasted their animation bumps on things like an entire skit of Dekapan and Dayon chasing each other. Though I did appreciate the Catherine reference in that.
Yeah, that was a really stupid move on Matsubara's part. I personally loved the skit where Kara and Totty compete to be the better host, and both lose in the end. The potential for the visuals of that one ... also, of course, Kara narrating his day.

Not to powerlevel but I did meet the dub vas for Kara and Totty back in November, and got to hear their voices for them. There was a rumour going around that they had already finished dubbing season 1, but when I asked them about it they said "uh, no, we've only dubbed like four episodes"
I'm a bit hesitant about the changes in dubs nowadays, but the people in charge of the localization seem to be big fans themselves, so maybe we should trust them. That said I'm baffled by the lack of promotion for it so they must be not that far into it.
The "Ichimatsu can't sleep" one was so torturous that I actually looked at the timestamp for the first time. They already did the idea in s1, and they already did it well.
Yeah I loved the famous matsus (the meta humour was brilliant) and the proper matsus. They were used well and pushed the jokes further and further which got my expectations up.

That is true, which was nice. Especially in the second season; according to hearsay, the director was disappointed that Choromatsu and Todomatsu were the least popular of the six, which is why they got the spotlight. But he was so one-note that I eventually got bored and moved on. He was one of my favorite characters for a long time, though.
