You have two eyes: use one to look at the screen, and the other to read the subtitles.
Speedreading. They're just phrases every 3 seconds or so, you should be able to do it with some practice. If you can't and it's really that much of a problem, just suck it up and watch dub.

I watch anime all the time and don't think i haven't any problem missing anything. But once I remember I have to read the subtitles I start doing it manually and my focus is either on the subtitles or on the action.
Imagine being so much of a brainlet that you can't properly watch subtitled stuff. If you're only starting then don't worry, you'll get used to it soon. Otherwise find another hobby.

Japanese is like one of the hardest languages for English speakers to learn. Even Korean is easier because Hangul is so easy to learn.
