I reread the manga this week and it's funny how early the dynamic of the various relationships started really early on.
Yuki seeing Tohru as a mother figure is pretty obvious even by the second/third volume and Tohru naturally drifting toward Kyou is developed pretty well.

Japanese society is extremely homogeneous so as a result they don't have this existential anxiety over identity politics the way Americans do, with their multi-ethnic immigrant society. This is sort of liberating for Japanese artists, they can make stories and visual works about gays or other races and not have all this cultural baggage and guilt they feel obligated to tote along and which makes any American venture into these topics excruciatingly tedious and preachy.
Of course, Japan has its own bugbears and taboos, mostly related to the second World War. Notice the severe dearth of anime and manga that deal with Imperial Japan's wartime activities? Even if they do use the setting they're usually circumspect about the actual war. The only manga I've really read that doesn't skirt around things and deals directly with the Imperial Army was Onward Towards Our Noble Deaths which is basically babby's first literary manga.

In Japan people ask gods for favors but they don't have the same kind of automatically revered status as "God" in Judeo-Christian, Islamic, and Hindu cultures. Praying to kami is seen as more like a business transaction, so Japanese culture can be much edgier about divinities without consequence.

It's more that Christianity is till pretty exotic to them, and when it first arrived they probably found the idea of a single omnipotent god that controls everything to be presumptuous. Japan is the land of 8 million kami, there's gods in every rock and stream, in household objects, some of them are powerful, fearsome deities, but they don't demand exclusive worship and the renouncement of all other gods. The way the priests described him (and remember these were Catholic priests from the 16th century) probably made him sound like a petty, insecure tyrant, and that image has stuck in the Japanese consciousness for centuries.

Gods are generally due respect in Japan, but it's a far step down from total, unconditional reverence and devotion that Christianity expects. It baffled them because they didn't understand the Japanese mindset toward gods, where the Christian god was just one more god among the millions already in Japan. They weren't being hypocrites, they didn't see it as "tricking" the priests, they genuinely were honoring God the best way they knew how. It just wasn't the way priests understood worship.

We can thus conclude that Fruits Basket maintains the basic plot structure of the gothic novel, consciously noting the genre's conception of a predatory, toxic masculinity as an overarching presence - an archetype consciously created by Akito, a character who imitates her own conceptions of masculinity informed by psychological trauma.

Not really. By all accounts Christianity grew fairly rapidly as the missionaries actually adopted both Japanese methods of preaching and a number of their customs. It was cracked down however later on due to a Christian revolt and Christianity being seen as a threat by e.g. Tokugawa Ieyasu to ther power. Notably here only the very basics of Christianity (e.g. creation and crucifixion and such) had been taught due to how many tried to convert- not enough priests.
"Hidden Christians" who survived the persecutions then tended to syncretize their beliefs with Shinto and Buddhist beliefs - this influence likely plays a role in how many animes nuns for instance are sometimes basically just rebranded Mikos and how Catholic/Christian priests are more or less just Shinto priests that wear a cross- the syncretism of these are probably more known than the fire and brimstone, honestly.
The reference to Akito being god is arguably a mistranslation meant to make the story more understandable to Westerners- the figure being referred to is the one who called the banquet in the actual Zodiac story: the Jade Emperor, who was the traditional Chinese "first god"- not meaning sole god or omnipotent god however.
I suspect the Christianity thing does play a certain role however: the Chinese belief system had the Jade Emperor play a key role in creation. The Japanese author, not knowing much about Christianity, therefore likely identified the figure of Jade Emperor with our God due to that. I guess in a way its similar to how Romans understood foreign gods as different names for their own.

The scene with the weird uncle was nice, always felt like he was a perv who would have snuck into tohru's room at night to lick the sweat off her in her sleep.

I guess you're focusing on the emotional slut part, but really I was surprised when I branched out to other shoujo just how much more sexual they usually are. Fruits basket eventually has its share of sexual situations, but they're a lot less common and a lot more in the background of the story that some others I've seen.
There's usually not much penetration but its sure as hell more satisfying than a shounen romcom that has 0. I like it when couples behave like people with normal sex drives not bottlenecked by sperging.
Shonen romances tend to be comedies since they're aimed at boys who don't really take relationships seriously.

Watching this new adaptation of Fruits basket after years after having read the manga, it makes me really see how the first anime adaptation wasn't really that good, the original anime didn't balance the comedy and drama as effectively.

The manga version wrapped things too quickly with Yuki and Kyo coming out of nowhere with no explanation on how they stole the adress from Shigure. The 2001 version spent 10 minutes of Shigure making fun of the guys because they didn't stop Tohru (and tons of "comedy" with him sniffing her towel, what the heck) and once more no explanation on how Kyo and Yuki got Tohru's address.
This episode was perfect because the characters remained true to their original selves and connected the missing dots from the manga.

I'm not good at retaining my emotional memories about things. I didn't find the shift terribly jarring, though. I enjoyed the whole thing throughout.
