Even when summoned to some foreign land to fight in some strange chaotic and savage ritual she never breaks her honor as the King of Knights.

She values not only her allies, but the many honest, virtuous, and noble enemies she encounters. She respects even the enemies, so long as they do the same for her, but will mercilessly slaughter the enemy that would harm the innocent. Her ceaseless adherence to her codes made her appear inhumane to her people and throughout her short tragic reign her anger never turned to malevolence. Her tragedy being brought to a head through a desperate struggle to erase her mark on the world is sad and endearing. It's this tragic selflessness that makes her so appealing to me. I want to feel like I have aided her somehow and that is why I like her so much.

I don't agree with your interpretation at all. The main reasons as to why she was really disliked and decieved is that she was seen as cold and inhumane, always making the correct, calculated choice with little to no humanity involved, making no one feel connected and sympathetic towards her, she was pretty much a lone person despite being the leader of all. The other reason is that no one ever wanted her as a king, she was a nobody and the only reason they went with her as a king was that no one ever believed that she would succeed and rule beyond a very short reign, making her demise not only likely, but actually to be anticipated.

I wouldn't even say that erasing her own existence itself is that much of a sacrifice. It's the combination of becoming a heroic spirit for eternity, while erasing her origin that really drives it home, especially since she would only become a heroic spirit by erasing her existence as a king, since she made a pact with the world for attaining the holy grail, unlike pretty much any other heroic spirit that became one in exchange for their legend.

Her arc in Fate is basically realizing that she doesn't have any obligation to try to change her actions, since her promise was to be a good king, which she ultimately was, even though she left her country in ruin. She also never really embraced becoming her own self, she pretty much completely remained a king of Britain all the way up until the end.

Her tragedy is ultimately about a semi-faustian pact. While she did become the king, ruled flawlessly and saved Britain as she desired, she never really trully united the nation and was ultimately forced to fight against the one thing she tried to protect, but that sort of became inevitable due to the pact to begin with, since she did forfeit herself and her humanity, making it impossible to attain the quality of becoming a leader of men instead of leader of a nation. Not to mention she never really did enjoy fighting to begin with.

Well, Rin mostly defeats Medea in UBW and she kills Hercules in Fate once. I can't really think of a master defeating a servant without some major help from their own servant other than Rin and Shirou, but even then Shirou was generally helped by either others, himself as servant or by having Avalon. I'm not sure Kotomine should count due to his condition, so she seems to be faring pretty well considering that it's been set up constantly how Servant is much more powerful than any master.

Sakura gains shitload of power by being a grail, while Rin doesn't really get any such benefit. And counting Shinji in is just weird.

Rin also single-handedly saved Shirou in the prologue and Shinji in UBW.

Rather sure that'd count as false. At least one end in Fate has her betraying Shirou if her loyality isn't high enough. You can probably find some logic to dismiss it as it generally seems to be about how dedicated she is to achieving her goals, but she still is shown being very vulnerable.
