So when did Masaru learn these dismantling techniques? I don't think I missed an episode but it feels like it.

From Faceless' memories which was partially downloaded into him before the start of the series. It was also how he suddenly learned how to control the puppets during episode 4.

They skipped the training in the anime so he already has maxed out the "dismantle" technique.
In the manga he used a much slower version of the "dismantle" against one of the O's in Kuroga Village, but he needed one of Jack-o techniques to slow down the enemy first.
