Pros:
Long, coherent story arc where she actually makes significant progress. Tons of cute/beautiful/sexy forms. Even more dignified, playful, vulnerable, caring, etc. character facets that vividly come into play. Super charismatic. Can talk shit without going overboard. Can take it when Araragi talks shit back. Great banter in general. The most loyal character in the cast by far. Super considerate, even at her absolute worst. Still fucks up, makes mistakes, embarrasses herself, and generally feels like a person instead of a mary sue.
Cons:
Started out unstable and violent. Having her around attracts problems. Still has a few emotional weak points where she'll completely crumble if you hit them.

Wrong on so many levels. Karen has fantastic energy and charisma - really pushing the genki tomboy angle. Her dynamic with Ararargi is solid, and the flirting between the two is handled especially well.

I'll admit that she does get forced to exposit a lot, but even in those moments she has a lot of charm and character in her way of going about things. And when she actually gets the chance to get a proper rapport going she can stand up to the greats.

This is just completely accurate. There's barely any chemistry in their interactions, and while they do get some nice lines they're just that: nice lines. They usually have little to do with the character's inherent traits, and often feel like someone else might as well have said them. And most of all they do nothing for the dynamic with Araragi.
Also you're right about Monkey being great, although I would say Hachikuji still beats her in terms of her dynamic with Araragi. On that element alone she's easily the best in the cast.

Shinobu more than holds her own because of how textured her banter is. The types of jokes are always changing up as it goes from dirty jokes to overwhelming each other with their flirting, to Araragi being the boke, to Shinobu being the boke, to a genuinely touching moment. Tsukihi's pretty good at that as well, but skewed more to her just being crazy.

Yeah she got a really bad run with Kabuki being butchered even though she was fucking fantastic in the novel, Oni being low budget as well as a weaker part, and then getting stuck on exposition duty in Tsuki before she actually got real parts again. And her part in Owari was great, it just hinges on people seriously giving a fuck about her and she didn't have a good lead-up to it.

Honestly it's one of my favorites - with Snail, Doll, and Bat all in top form. I wouldn't even call what goes on in that arc exposition in the usual sense, as she's straight up telling a story; I thought her narration was well written and performed, and I liked the visuals accompanying it. I will concede that it went on a bit too long, but not to a degree that completely ruined my enjoyment. And even if it was truly bad all of the other content was fantastic - especially that rollercoaster of a final episode.

I'm on Owari 1 right now, in the middle of the Math arc.
Crab was top tier throughout all of Monogatari 2. Her phonecall with Nadeko was legendary. Between that and her hiring Kaiki she literally saved their lives. She was also great in Tsubasa Tiger. And literally every other arc she's been involved in so far.
Also her punching Sodachi in the face was fucking gold.

How is she interesting? I legitimately do not understand what has people so fascinated with her - and she very much is my type, or close enough to it at least.
My complaints with her are, if pressed to put it simply right now, threefold:
First, she has poor chemistry with Araragi - an absolute sin in such a banter-driven series. She has a few bits, and a few fun traits, but little constituting a rapport - a solid back-and-forth or dynamic. Araragi can respond cleverly, and she can say clever things, but these do not lead to proper verbal engagements of the caliber this series can achieve.
Second, she's quite shallow and unchanging at this point. She has resolved her issues and become a very static character, and she doesn't have any complexity being unveiled to us either. Even during Bake she wasn't all that complex, but she still had layers to unpack. And, poorly handled though it was, she has a semblance of growth in the early series - or at least she said she did (repeated claims of working to change herself, little practical evidence or weight). This is the primary reason she's at the bottom, rather than Cat, who is a more complex character with a more solid arc, even if her chemistry is even less present. Of course, this could be forgiven if she was particularly engaging or compelling, but see my other two points for that.
Third, she is, perhaps ironically, lacking in emotional weight. Now to clarify, she does have some great scenes, but these scenes are often framed as some sort of catharsis - a catharsis for which there is no build up. Particularly in the romance, where there was a really solid construction of tension through Bake leading to a great relief in the 12th and 15th episodes that was never matched. To address the problem from a different angle, she is talked up and given importance that doesn't suit her, because she is not at all set up to receive that importance.
