Because yeah.
Look at how much knowledge and skills are at our fingertips with the internet and 99% of people do not capitalize on this resource.
If medicine/engineering/physics/law/basketweaving is so awesome and accessible by just reading some books, why doesn't everyone in real life know/study it?
All of those are literally irrelevant to daily life outside of specialised professions which is why nobody can be bothered, in FMA since alchemy ability isn't an inherent superpower like it would be in most media any fag could learn cooking alchemy or farming alchemy or building alchemy and suddenly normal humans are literally pointless because you're 100x better at doing things than they are

Yeah dude just be smart enough to study it for years and get your alchemy license that's all you gotta do.

To be fair, you have to have a very high IQ to understand alchemy.
If maths really gets you 300k starting why isn't everyone doing maths?
If physics can be learned through the books, why can't anyone have their own nuclear bomb?
I'm saying that the moment alchemy of any kind was applied to a profession human nature would dictate that everyone else would have to learn it too to stay competitive, say someone applied alchemy to carpentry, everyone else who didn't do the same would be 1000x less efficient and from that point onward learning carpentry alchemy would be a requirement to even become a carpenter in the first place

I mean, you can use a lighter to start a fire (which gives everyone the ability to use it if they just flick the wick), probably less than 10% of the populous in the first world knows how to effectively build and start one without a lighter or match.
Tech is the same. Cooking, heck medical stuff is really effected by this.

Probably not very high outside the capital city. And even if they could read, they likely couldn't access many books valuable to learning alchemy. Only reason Ed and Al had access to so many books was because Hohenheim left them behind.
