Because a death is a moment and a life is a lifetime. Most anime and manga are only a snapshot of a character's entire life. You need them to hang around for a long time to get an idea of that.

If I can think of anyone who lived a life worth living, its Kokoro. She was literally born to die, a tool to protect the elites of society, but she really wanted a different fate and to live life to the fullest, and to pass on something for later generations.

If we only take into account the span of their lives we get to see in their animes, most slice of life characters have pretty damn good lives
