I find this trope disgusting as fuck. As in seriously putrid. Nips seem to be obsessed with trying to gamify life as a whole, and I feel this trope isn't really limited to isekai. There's a bunch of other fantasy series that make use of JRPG mechanics, while not being isekai.

I only really tolerate this kind of shit when it's deployed in a limited range, and has some reasonably explanation. In Danmachi, "skills" and "levels" are literally gifts given to people by their patron god.
In Reincarnated as a Slime, it's like that cause the author likes video games.

In the vast majority of these fantasy LNs, you could strip out the RPG stats and skills, and nothing would change.
