It's important to Hyakkimaru on two levels: spiritually we can see he literally is in danger of becoming a demon through the eyes of the monk, and developmentally the guy is a shell of a human who needs to learn not to respond to everything with violence. Thematically it's also important to Dororo to overcome the natural state of violence that wars have brought to her life.

Buddhist ethics maybe, but not "asian". If you read any Chinese or Japanese classic text, you will see that taking horrible revenge on your people that wronged you and sparing noone, not even their families, is in line with confucian morality.
