Can't really say for sure, lately it seems most light novels and only a few ongoing romcoms are being adapted though, aside from lots of shounen battle manga obviously.

There is a LOT of manga being published at any given time, so most don´t get adaptations rather than the reverse. Yugami is a particular case only because it´s a monthly manga being published in a weekly magazine, but since it´s published on sunday it would have to be a top three seller to even be considered for an anime adaptation, like detective conan, major or zettai karen children. If I were to guess the first in line to get an anime adaptation out of the newer stories, it would be komi-san.
But circumstances can change easily enough.

There are a few reasons Sunday doesn't really have new anime for its manga anymore. Sunday, unlike Jump and Magazine, doesn't have an in-house anime department, meaning that instead of looking for people to do adaptations of their manga, they wait for studios to come to them to adapt something. As well, Sunday series over the past few years really haven't done well (I think over half of their anime in the past 10 years flopped) so naturally they don't want to flop again and as such, don't make new anime.
