I was given insight into eggs and that they lack salmonilla. I have not looked into it myself, but the salmonilla develops around the shell, so if you wash your eggs you greatly reduce the risk of contaminating the egg.

Different strains of salmonella (~2500) have different heat resitances. The most common one dies at around 60-70 degrees celsius. But they other strains, which are more heat restitant are common enough to still get you.
Just buy eggs that are from vaccinated animals and meat from animals that were not raised in a literal shithole. Hygine in the farm prevents salmonella, thats why you can eat sashimi or carpaccio in any civilized country (non USA)

Consistency of the whites mainly, poached eggs have an smoother and lighter/more gelatin-like texture while boiled eggs are just denser/springier even if you soft boil them.

Taste of sushi depends on another skill, it is timing skill. While it is fresh fish how many minute before serving will decide the taste too early or too late sushi will not taste good.
