Why does this trigger so many people so much? Any organization has a main governing body that handles job logistics and work delegation for ones that are qualified or not qualified for the particular task at hand. And the "ranks" are just fancy fantasy terms for seniority and experience.

Because authors are lazy with the idea of rankings and necessary skills required for any given rank. This also goes hand in hand with using video game logic of experience and not just practical experience, and the next point which is having the MC be the lowest rank despite demonstrating capabilities that put him in the same bracket of power as the upper ranks.

Guilds can be done well, and so can rankings. But the vast majority of stories you'll find them in are gutter trash that just use guilds as a framing device but don't put much effort into the logistics of such an organization and it's day to day operations. So guilds are largely just video game analogues leading to really lazy setups so the entire concept gets dragged through the refuse.

Pic related is a good example of how to use a fantasy guild.

Is it? At the end of the day, it's just the main hub organization/governing body in that particular setting. In any other setting, it'd instead be called the Church, the Monarchy, the Knight Order, the Enclave, or whatever. Same with "ranks". Stratified ranks and position based on experience or seniority is a thing wherever you go. At times, it will be arranged as: "Bronze Adventurer" -> "Silver Adventurer" -> "Gold Adventurer", but you may sometimes see it as: "Initiate" -> "Knight" -> "Knight-Commander", or maybe even "Wagecuck" -> "Middle Manager" -> "Fat Bald Executive".

As long as the setting focuses on any kind of society, these things will pop up for sure, just under different names. The mere presence of these kind of organizations isn't a bad thing at all, it's just a natural result of the setting.

This is ironically why just having a thing called "the adventurer's guild" is a pet peeve. Despite these organizations existing in the setting, they paradoxically feel somewhat disconnected because they just have a generic label slapped onto them. This is part of what makes guilds in their more common usage lazy. The writer doesn't want to give better justifications for why a bunch of people are grouped together like this.

This also goes for Dungeons which are generally these nebulous dangerous areas that were created by some demon lord or what have you and just pop up and conveniently restock themselves because magic.

If there were a dungeon tainted by darkness, why not just say the church set up an outpost to combat it? You could instead say the regular army has a barracks near a forest where monsters breed and emerge from and they allow mercenaries to join in on repelling the monsters that come out. Put some effort the actual fluff of a guild instead of being as generic as possible.

This is more of a recent thing. Older Isekai like Maze, El Hazard, Magic Knight Rayearth and Twelve Kingdoms all have the protagonists wanting to return home (at least at the beginning).

Yes but you would have thoughts about your old world, or think about your old world because you have literally lived you entire life there. It would be impossible not to. Most anime cut out this part, its like the MC goes to a new world after living 30+ years on Earth and thinks, "oh well let me just forget everything about Earth and never think about it".

Final arc/fight dragged on way too long and most people burned out and just wanted it to be over by about 2/3 of the way into it. There is a reason they have quite a few of these leads as miserable NEETs or people stuck in dead-end jobs

But from an economic standpoint, you make more of a profit if you're capable of both gathering and defending yourself. The most people you add, the less profit you will individually get.

I think the main issue is that the "adventurers's guild" organization is somehow supranational/global, while the rest of the world is somehow only feudal/national.
If there were more competing "adventurer's guilds" between territories within a nation, then it would be fine.

After all, it's not like every major city had a cobbler's guild, which were all majorly organized world wide under a superleadership.
Then again, magic might make instant internet-like communication possible, so a fantasy world might actually justify having supernational organizations.

It doesn't matter how much they plot. Isekai slave collars are as unbreakable as sea stone.

They still have free will. They're just incapable of ever going against the rulers forever, and they automatically suffer and die when they do any actions that are set against the rulers, because apparently, the magic collar/brand thingy can also automatically recognize the true intention of the slave and punish them accordingly.

That's what's being criticized. And it's also something that every isekai ruler should do immediately, because the benefits of the slave collar/brand is so immense that it's always worth it. Especially since it's dirtcheap.

The real issue is why kings and lords can sleep at night knowing about the existence of those transnational organizations and their influence?

There's actually a western novel that use an obedience collar system.The entire culture revolves around it and all citizens wear it willingly with different levels of collars having different perks.

i'd say that it's even more apparent in Dungeon Defense. Dantalian is more devious than the other demon lords anyways, the only reason the isekai was added was to make an easy explanation on how he was able to monetize the cure for a plague in advance, or recognize early talent beforehand. Both obviously you can explain numerous other ways instead of using an isekai plot element that cheapens the whole plot (especially if it's because the whole world is apparently a videogame, so it's inherently very juvenile). It's even more of a pity with Dungeon Defense since it does try to does do something more unique even if it comes out as chuu2/pretentious at times.

With other isekai, the aspect usually stays relevant because the MC is retarded and wants to introduce bland japanese cuisine or something 100 chapters later.

So he is transported into a different world that is mostly on the ancient Greece level and he is in the body of a mentally stunted young man and he starts making steel swords that can cut in half the best bronze swords around and he is great at sex and shit and he tortures his enemies until they tell him all he needs to know and he can lead ARMIES, MAKE ARMIES, LEAD COUNTRIES and he is unbeatable in combat and all people trained by his methods are unbeatable in combat and there's that Illuminati-like Order with magic-like technologies who hunt down all people isekai-ed to their world and then when he is like fifty in the third book, long after he blew their main base with FUCKING NUKES he made people make for him he dies after destroying their last spare base and making sure they no longer can fiddle with that world but not before his head is again in a familiar helmet.
And then the second arc (so to say) happens and now it's a medieval world with mage-like immortal rulers (they get their powers from rocks but it's hinted that their magic is similar to technologies of the Order from the previous world which could cause world-wide cataclysms at their worst and do other stuff, like long-distance communications or sensing dimension-hopping freaks like the MC) and he doesn't meet his match until he runs into an evil, sadistic helmet-isekai-ed guy (not from Earth) in whose original world he was working in a similar agency to KGB in a country somewhat like USSR. I do like how in the third book, when he is 50-years-old he goes undercover to fight in an arena of one country and while everyone who knows who he is thinks that it would be a piece of cake, the local arena legend (who appears just in this part of the book) almost destroys and kills him before he can accomplish his true task of finding the aformentioned last spare base of the Order. It's nice of the author when he remembers that he is writing about a superhuman HUMAN, and not a god.
