>the ideological climax from UBW gets resolved surprisingly easily with Taiga's involvement (Tiger Dojo's the shit out of them)
>they decide to start by at least protecting the people they love (with shirou deciding he can work his way from there when everything is done)

I did read the VN plenty. And I'm not really sure about the waifubait stuff, but I don't think Rin was particularly brutal to him. Like, that 'mind wiping' thing. In context, all she did was erase his memory of the Holy Grail War (which was like, two days up to that point in the VN), and lets him go back to school. That was the big bad end after claiming she'd kill him.

A lot of Rin's character is that she talks tough, but isn't the cutthroat mage she wants to be. Namely cause she's a teenager getting in over her head.
