Jabberwock can only be killed with a vorpal sword. Nothing else can kill it, it'll just instantly regenerate from any attack. So if you don't have one in stock you're basically fucked. In the Extra manga Cu and Nero both team up to fight the Jabberwock and proceed to get their shit stomped because they can't do anything to stop it. Plus it's so strong that if it managed to land just a single attack either of them would get killed.

Most Casters could probably make one if they had time, but they'd only do that if they knew they were going to be fighting something weak to one but if they didn't it's unlikely they'd have one ready to go. In Extra, Alice was a little girl so she liked bragging about her servant and that's how the MC figured out her weaknesses.. But a smart master probably wouldn't say, "Haha, here is the Jabber who can only be defeated by a vorpal sword." So the vast majority of servants would go in blind. But even beyond the Jabberwock and her time control powers, Nursery Rhyme has infinitely regenerating card soldiers and a Reality Marble that would eventually kill any master trapped inside provided you kept the servant occupied (such as fighting those card soldiers or the Jabberwock). She's a top tier, bullshit character right up until you figure out exactly what her identity is and how her powers work and even then she's got some pretty bullshit capabilities.

Sure her counter is Gil and she'll lose without much of a fight, but pretty much any servant is going to die without much of a fight the instant Gil gets serious. See Iskander and Heracles.

there are servants who while overpowered by Gil have a chance if they play their cards right/get lucky, Saber, Herc and Cu would be in this category for example- people whos strength is rather unconditional
HL works on a very binary powerlevel, either she wins when they have no counter or they have a counter and she loses very badly
and the point is that Gil is just the easiest example of a servant that has her counter, if they had the counter it wouldnt really matter WHO the servant was, even if they couldnt just Ea GG her into a smear she would lose

What can you realistically get if you win, angrymanjew memes aside? Immortality? Could I keep my servant forever? I read somewhere that almost reaching the "root" but turning back could allow you to learn true magic, but would anyone be able to do it? Or only an already experienced magus can actually make full use of the grail, and everyone else should just stick to immortality or permanently keeping their fuckbuddy servants?

You can get anything you want. Immortality is guaranteed, which is the reason makiri pursued it to begin with. Servants can gain a second life with it as well, as Gilgamesh did.
Reaching the root as Tohsaka’s intention would just involve fusing into the heavens, gaining knowledge of all things, and then living a higher level of existence. The einzberns had previously been capable of performing true magic, however this ability is lost and they created the holy grail as a means of replicating it (ie giving a soul material form)
