I thought about it more and I realized the issue is 4-komas adaptations. In 4-komas they have to fire off a single joke in only 4 panels and that usually gets poorly and segmentally adapted to anime.
Unlike before when there were barely any 4-koma adaptations , we now have a ton of comedy 4 koma adaptations.

I think it's just a different concept of humor. They laugh when the tsukkomi points out the gag. I would find it significantly more amusing without the tsukkomi most of the time.

The UY movies were better than the series.

Fair enough. Humor is incredibly reliant on cultural context, so it makes sense that an outsider such as my self wouldn't find Japanese humor all that funny.
