I think the progression of JJBA is the best example of the interests changing over time.
Araki is pretty much copying HnK at the beginning (which in itself is partially based off Mad Max) and is incorporating actors like Schwarzenegger, Stallone and Eastwood into his characters. Then as time goes on everyone gets skinnier and twinkier until everyone looks like they're in a boy band or something.
And a lot of the current mangaka have grown up on the 00s era stuff like Naruto which didn't have any masculinity and are just copying THAT.

HnK may also be inspired by Violence Jack which came out before Mad Max

the artstyle shift in part 4 killed jojos for me. Everyone looks lame and uncool now.

It's possible but that still doesn't mean the character designs weren't inspired heavily by The Road Warrior.
